oven-roasted smashies
/Chrissy Teigen made potato smashies famous, and now Carley Smith, the Fairy Gutmother, is making gut-healthy potato smashies famous. This recipe is Carley's go-to potato dish. It's perfect for meal prepping, adding some pulled pork to top for a complete meal, and as a side dish that kids absolutely love to cook & eat. You can add your favorite seasonings & herbs, shredded cheese .. the list is truly endless. We love using fingerling potatoes for smashies!
Carley joins us in the kitchen making this delicious creation that optimized gut health by cooking & cooling the potatoes to increase the amount of resistant starch content. Aka fiber for the gut. We boiled the potatoes, allowed them to cool in an ice water bath for 5 minutes, and then we did the fun step ~ smashed 'em. This cooking-and-cooling step is essential whenever you are cooking with potatoes to get all the nutritional value these superstar veggies have to offer. INGREDIENTS
1.5-2 lbs of fingerling potatoes (we used baby round taters here for some fresh crop)
4 tbs high-heat oil (we love Colorado Mills Sunflower Oil)
1-2 tbs Himalayan pink sea salt or Kosher salt
2-3 tbs fresh rosemary, chopped
optional: any other toppings you desire, such as more herbs & seasonings, shredded cheese, garlic, shredded pork to top
DIRECTIONS
Preheat oven to 350°F
Fill a large pot with water and some salt and bring to a boil on the stove
Add potatoes (un-smashed and unpeeled) and boil for about 15-20 minutes or until softened
Immediately place boiled potatoes in an ice bath (bowl of ice and cold water) or run under cool water until potatoes are chilled (about 5 minutes or so)
Dry off potatoes and add them to a mixing bowl, coating with sea salt, rosemary, and oil and combining until well mixed
Transfer potatoes to a baking sheet and gently press each potato with the palm of your hand until "smashed" ~ the fun part!
Drizzle potatoes with a little extra oil, and then roast in the oven for about 15-20 minutes or until golden and crisp. Enjoy! So simple & easy :) Great for having kiddos help out ~
