Our favorite Fairy Gutmother, Carley Smith, was in the process of creating gut-healthy treats for Halloween when she stumbled upon one of her favorite creations ever ~ potato brownies.

These decadent, fudgy brownies are created with mashed potatoes. So delicious and so gut-friendly. Potatoes are a great source of resistance starch that feeds the good gut bugs. Not only great for gut-health, but such a great source of nutrients. While we could tell you not to skip on your mashed potatoes … does anyone ever skip on mashed potatoes? Isn't that an American favorite :) Carley has found a way for you to include even more mashed taters into your diet, no guilt necessary. No tricks here, just treats ~

A few notes from the Fairy Gutmother ~

1) She used fresh russet potatoes for this recipe. She would not recommend using any pre-prepared mashed potatoes or instant mashed potatoes since they likely have flavor and spices that will throw off the taste.

2) To prepare the mashed potatoes, simply peel the russet potatoes first, then boil in water for about 30 minutes until soft enough to pierce completely with a fork. Strain the potatoes immediately and cool by placing in the freezer (you could also place in an ice bath) to boost the resistant starch content (this part is optional but makes more gut healthy). Blend the potatoes with a food processor until smooth (you could also use a fork, immersion blender, or hand mixer if available).

3) Finally, you can substitute any nut butter for the recipe. Carley used a lightly, sweetened sunflower seed butter but peanut or almond butter would work as well. You can also experiment with dates here too!

INGREDIENTS

  • 2/3 cup almond flour

  • 3 mashed russet potatoes

  • 1/2 cup cocoa powder

  • 1/2 cup sunflower seed butter (Carley uses Once Again brand)

  • 2 tbs sunflower oil (we love Colorado Mills Sunflower Oil)

  • 2/3 cup maple syrup

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • 1/4 tsp sea salt

  • 1/2 tsp cinnamon

  • 1/3 cup chocolate chips

  • optional: 1/2 cup walnuts

DIRECTIONS

  1. Preheat oven to 350°F.

  2. Combine wet ingredients (mashed potatoes, sunflower seed butter, oil, syrup, extract) into a mixing bowl.

  3. In a separate bowl, combine all dry ingredients (flour, cocoa powder, baking powder, sea salt, cinnamon)

  4. Add wet ingredients to dry ingredients and mix until well combined.

  5. Transfer mixture to a greased 8” baking dish and bake for 25-30 minutes. Allow to cool completely before serving. This step is crucial. At least an hour or so of cooling before slicing into these decadent brownies :) Enjoy!
