Zesty Potato Salad
Not only is this potato salad absolutely delicious and perfect for summer, it features some unexpected twists that are kid-approved. Summer-Perfect Cowboy Hash
Carley made sure to include our favorite dish ~ a cowboy hash. Carley's version is perfect for summer with fresh, seasonal produce but also all the good stuff: fingerling potatoes, bacon, eggs and all the herbs. This recipe was taste-tested by kiddos who very much approved :)
Carley also optimized gut-health in this recipe by cooking and cooling the fingerling potatoes to increase the amount of resistant starch content. We boiled the fingerling potatoes, allowed them to cool in an ice water bath for 5 minutes, and then we chopped them up to throw into the hash. This step is essential whenever you are cooking with potatoes to get all the nutritional value these superstar veggies have to offer.

Oven-Roasted Smashies
Chrissy Teigen made potato smashies famous, and now Carley is making gut-healthy potato smashies famous. This recipe is Carley's go-to potato dish. It's perfect for meal prepping, adding some pulled pork to top for a complete meal, and as a side dish that kids absolutely love. You can add your favorite seasonings & herbs, garlic, shredded cheese .. the list is truly endless. We love using fingerling potatoes for smashies!
