Potatoes are a great type of fiber that helps feed the good bacteria in the gut! If your gut is not compromised and you’re able to process fiber, they are a great item to incorporate into your diet. Plus, they are also high in Vitamin C, B Vitamins, and folate and also have a lower Glycemic Index when boiled.

These Potato Pizza Bites are a fun recipe for the entire family. Great for snacks, parties, football Sunday—you name it! Plus you can use any toppings of choice. ~ Fairy Gutmother

This recipe is so simple to make that it’s also a great one to include kiddo assistance. Pizza x Potatoes … what’s not to like for a kid as they help cook. Pepperonis to munch on throughout the process :) Works as a great after-school snack too ~

INGREDIENTS

Cook Time: 1 Hour Serves: 4

  • 1.5 - 2 lbs fingerling potatoes

  • 4 tbs high-heat oil (we love Colorado Mills Sunflower Oil)

  • 1 tbs Himalayan sea salt

  • 1 tbs oregano

  • 1/2 cup pepperoni, chopped

  • 1/2 cup parmesan cheese

  • Marinara Sauce for dipping

DIRECTIONS

  1. Preheat oven to 350°F

  2. Fill a large pot with water and bring to a boil

  3. Add potatoes and boil for about 15-20 minutes or until softened (more potatoes means more time)

  4. Remove potatoes from stove and strain

  5. Immediately place in an ice bath (bowl of ice and cold water) or run under cool water until potatoes chilled. This process helps boost the resistant starches in the potatoes

  6. Dry off potatoes and add them to a mixing bowl, coating with oil, sea salt, and oregano

  7. Transfer potatoes to a baking sheet (no foil or sheet paper, so they crisp up better) and gently press each potato with the palm of your hand until "smashed.” The thinner you can smash the fingerlings while still retaining their shape, the crispier they will be ~ which is what you want for that truly pizza-in-your-mouth effect

  8. Drizzle potatoes with a little extra oil then roast in oven for about 15 minutes or until slightly golden and crisp

  9. Remove from oven, flip potatoes to other side, then top with pepperonis and parmesan. LOTS. Also sprinkling the cheese beyond the fingerling to crisp it up around the edges. That little effect will really make these potato bites taste like pizza!

  10. Option to sprinkle with a little added oil then place back in oven for another 10-12 minutes until cheese is melted and are crisp on this side

  11. Remove from oven, serve with a side of marinara sauce and enjoy!
