JJ Virgin's Garlic Herb Mashed Potatoes

Servings: 4          Active Time: 10 Minutes          Total Time: 35 Minutes

INGREDIENTS

  • 2 cups Yukon Gold potatoes (skins on, approx. 1 lb)

  • 2 cups bone broth

  • 2 tbs unsalted butter

  • 2 tbs chopped fresh thyme and rosemary

  • 2 cloves garlic, minced

  • 1/2 tsp sea salt

  • 1/4 tsp freshly ground black pepper

INSTRUCTIONS

Cut potatoes into fourths, and then boil in bone broth for 10-15 minutes, until soft. Transfer potatoes to a large bowl, and add 1/2 cup of the cooked bone broth from the pot. Mash with the back of a fork or a potato masher. Add remaining ingredients and mix well; stir in more bone broth or butter for desired consistency. Top with more fresh herbs as desired.
