JJ Virgin's Garlic Herb Mashed Potatoes
/Servings: 4 Active Time: 10 Minutes Total Time: 35 Minutes
INGREDIENTS
2 cups Yukon Gold potatoes (skins on, approx. 1 lb)
2 cups bone broth
2 tbs unsalted butter
2 tbs chopped fresh thyme and rosemary
2 cloves garlic, minced
1/2 tsp sea salt
1/4 tsp freshly ground black pepper
INSTRUCTIONS
Cut potatoes into fourths, and then boil in bone broth for 10-15 minutes, until soft. Transfer potatoes to a large bowl, and add 1/2 cup of the cooked bone broth from the pot. Mash with the back of a fork or a potato masher. Add remaining ingredients and mix well; stir in more bone broth or butter for desired consistency. Top with more fresh herbs as desired.
